FOOLPROOF CHEESECAKE HINTS

I wrap the bottom of the pan with foil, folding under about two inches UNDER the round pan. Then I put the ring on and fold the foil up to go around the OUTSIDE of the ring. Bake as usual. When ready to transfer, fold foil down remove ring slide a card board round between bottom and the foil. Fold foil under the cardboard round. Then you can put that on a platter. Otherwise, you may freeze the cheese cake and then place it directly on a platter.

  CHERRY CHEESECAKE

...in the Microwave!

1 8oz. bar of softened Cream Cheese
1/2 C. sugar
1 egg
1 tsp. vanilla
1 C. sour cream
9-inch graham cracker crumb crust

In medium bowl, combine cream cheese, sugar, egg, and vanilla until smooth. Stir in sour cream. Cook in microwave at medium 3 and 1/2 to 4 minutes. Stir twice. Pour cheese mixture into pie crust. Cook at medium-low 5 to 7 minutes, or until center is almost set. Chill 3 hours or overnight. Top with fruit.

For crust:

1/3 C. butter
1/4 C. sugar
1 and 1/4 C. graham cracker crumbs

Heat butter and sugar. Add crumbs and cook in microwave at medium for 3 and 1/2 minutes. Pour in cheesecake and chill.
