 Appetizers



          CLASSIC SAUSAGE BALLS

 

1 lb Bulk sausage (hot or mild)           

2 c  Sharp chedder cheese grated 

3 c  Bisquick                        


Combine all ingredients and shape into balls the size of walnuts. Bake on cookie sheet at 350 degrees F. for 15 minutes. Makes about 5 dozen. NOTE: defrost and reheat at 350 degrees F. Servings: about 10

                     

 

SPINACH BALLS 

2 pkg frozen chopped spinach, drained
2 cups herbed bread crumbs
1 medium onion finely chopped  

6 large eggs (7 med)
3/4 melted butter/margarine 

1/2 cup parmesean cheese, (generic is fine)
1 cup grated cheddar cheese 

1 teaspoon garlic salt
Mix ingredients well. Make about 5 dozen balls (about the size or smaller of ready made meat balls) and bake on ungreased cookie sheet for 20 minutes at 350 degrees.  

These can be made (cooked & all!) way ahead of time and frozen, reheat just before serving, they are fine even when cold.

 

 

 

TERRY'S SPINACH DIP

 

1 can spinach, drained and chopped        

1 T. lemon juice 

16 oz. cream cheese  

6 slices bacon, cooked and crumbled            

 2 T. butter  

1/8   t. nutmeg  

 

Cut cream cheese into cubes and combin e with all other ingredients. Microwave until hot. May be served hot or cold.  

 

 

CARROLL'S SPINACH DIP

 

1- 9 ounce pkg. frozen Spinach, chopped  

1 cup Water chestnuts (drain/chop) optional 

1 pkg. Knorr Spring Vegetable soup mix  

1 cup Mayonnaise  

8 ounce Sour cream  

Mix all.  Refrigerate 1 day before serving. Serve on crackers.

STRAWBERRY CHEESE NUT RING


1 pound medium sharp or sharp cheddar, grated
1 cup finely chopped walnuts, divided in half
1 cup mayonnaise
1/3 cup minced onion
3 to 4 grinds of black pepper
1/2 to 1 teaspoon cayenne pepper
1 cup (or more) strawberry preserves

In a medium bowl mix cheese, half the walnuts, all the mayonnaise and onion.
Add black and cayenne pepper to taste. Put the mixture on a round serving
plate, shaping it into a rather flat-topped mound about 2 to 3 inches high.
Make a depression in the center that will hold about 3/4 cup. Spoon the
preserves into this well. Press the reserved nuts around the edge. Serve with a small bowl of extra preserves.  Serve with crackers 

 

VEGETABLE PIZZA


Roll out one tube crescent rolls on cookie sheet ( very thin) and bake only for about 5-7 min or until brown (watch closely) Let cool  

Mix together: 

 1- 8oz. pkg cream cheese 

1 pkg. Hidden Valley Ranch Dressing Mix   

1/2 cup mayonaise until smooth  

Spread on crust.  

Chop: green onion, green pepper, radishes, cucumber, brocolli, cauliflower, and carrots  

(all extra fine) 

 Spread on cream cheese mixture. Press it into cream cheese mixture. Top with finely shredded cheddar cheese. Slice into squares and keep in refrigerate. Do not bake.

 CHILE' SAUCE  

 

1/2 onion

1 bunch fresh cilantro

3 large tomatoes

1-3 Serrano Peppers

1 ripe avacado

1 lime

seasoning salt

 

In a food processor chop 2 tomatoes, onion, Serrano pepper(s) and cilantro. Pour into a bowl. Dice by hand the other tomato and the avocado.  Mix with the mixture from the food processor and add the lime juice and seasoning salt to taste.  Serve with chips.
